I'm pretty certain it is rabbit. The way it crumples in the rain and the fact that all other HJ hats in all of the other films were rabbit, etc.
And the rabbit finish on HJ is pretty good - I have one of their rabbit Raiders hats and it looks great!

In 1990 I went through as many Indy hats as I could find at LFL/ ILM and all of the hero hats said 7 1/4.
