Indy the archaeologist would carry a notebook, pencils, compass, measuring tape, pocketknife, camel-hair brush, small trowel, magnifying glass, bandana, matches, gloves, and a ball of string or cord. All standard kit for the times, and still so today.
Several of those items (pencils, knife, compass, gloves) have their own discussions on this board.
Indy the intrepid adventurer would include extra rounds for his sidearm. And of course the famous sandbag.

I'd also like to add jerky of some nature (maybe Pemmican?) to the bag.
