Personally, I would wear it.

Yeah, just wear it for a while. No need to condition goatskin unless it's dry.

Just wear it. Sleep in it. Do chores in it. Shower in it (unless it is already washed goat  )

I would wear it. A poster above me would smack me for the next part, but if you want to take off some shine and start the breaking in process, you could soak the jacket and then let it air dry. Be sure to wear it when it's damp to get some nice wrinkles going in the sleeves.

I agree just wear it, constantly, and don't lay it down anywhere.

Beat it with a hammer - it'll laugh at you.

In seriousness, I wore mine in the shower a few times then wore it till dry to shape it and bring out texture. I gave it several rubs with alcohol to take off some shine. I ran it for hours in a no heat dryer (tied in a canvas bag) to get it softened. Finally, I put on Pecards to make sure it was ready for the winter.

After all that it still looks just about as it first did but the leather is soft, the color a bit more mellow, and it has great texture.

That's good
I'd rather do nothing as I tend to mess things up :(

I would say wear it and enjot it, like everybody else.

Don't worry about messing things up, these jackets will hold together like the Milennium Falcon!

If for some reason I change my mind and get cowhide, would I have to do anything when I get it? It would be one of US Wing's Vintage jackets which is pre-aged I guess.

Not really, I don't think it will need any pecards or anything like that. I got my USW LE wet and let it dry while wearing it to let it conform to my fit. You can also do the washing machine trick as mentioned before. If you want the sleeves to look like TOD you can wet it (again) and run a pole through the sleeves then crunch the sleeves to give it a good worn in look like this.

which will result in this look...

Yeah, I kinda see what your getting at... :[

It's actualy a picture of my jacket with a poster tube slid through the arms and I then rested on the back of two chairs. I wet the sleeves of the jacket, slide the tube in the arms and pushed up the sleeves to allow the wrinkles to set in after it dried. That gave the TOD jacket look I was going after in the second pic... next time I'll should try to explain it better.

I guess I didn't notice it at first, but from here the two chair backs do look like deformed muppets
