Right, but I was also thinking in terms of specific dirt at the bottom, so it looks darker where the contents have been sitting and where the bag would usually have been in touch with the ground.

Nothing like good old fashion real dirt.
Make a small batch of mud and either let the bag sit in it or dap it around where you want to be be dirty.
There's no real science to it. It just how exactly do you want it to look, and play around.
That's the fun part of all this.

And here I was thinking there would be some weird trick!
Well, I was already planning to take my Raiders brush out to dirty it up, so I guess now I can take this too.
I hope this doesn't mean the whole shelf where these guys will be sitting will end up messy as heck though!

Come on, how many dirty socks have you run thru the wash only to have them still be grimey looking for the rest of their operating life?
You're just manually adding grime to the bag. Obviously let it dry and maybe clean it a bit before displaying it.
Rinse and repeat.
It's a process.

you can dig a hole and put the bag inside, pour some water from time to time but keep under surveillance, because it can quickly damage the stitching and cloth.
For leather, that process is just the best I found, however it requires some care afterwards, because the leather gets very hard, it will require cleaning and especially greasing, before any use.
That's exactly what I plan to do with my bag strap and leather belt.
