I purchased a pair of original officer's pinks from a local army surplus store. Now, I'm no tailor, but it seems to me that it shouldn't be impossible to add pleats to trousers that have plenty of room to be taken in. Has anyone actually found a tailor that will do this? I was told 'no' by about five different tailors before getting frustrated and giving up.

It may not be possible in terms of engineering. IE: you just don't have the fabric to do it. It's not purely about taking the pants in, but rather the shape of the various parts of the pants when initially cut.
My dad goes to a tailor for his suits, and the guy's been in the business for some 50 years now. Tailoring -- TRUE tailoring -- is a dying art form. But this guy's got patterns for suits that look like sheets of paper, which he'll use as a template to cut the fabric. It may be that if the "template" needed to make the pants didn't include pleats, there's no way to add them in and have them look and fit right.
