The first thing I would do differently is...get a Wested.

I made a huge mistake when I purchased my Flightsuits Expediton. I should have bought two jackets instead of one. 8)

I had owned a Wested that had pleats made way too deep, kinda like what I'm seeing here in the above pics. The Flightsuit Goat that I own now, however, has shallower pleats and elastics to help keep em' closed. The MK pic is a good example of how the action pleats should work....

I actually prefer the deeper pleats....I think body type has alot to do with how the jacket looks on one person vs the next. And it looks like in Skippy's photo, not only is he sitting, which pushes the jacket up and opens the pleat, his bag is pulling the back panel rearward opening it even more.
