How did those of you with Wested jackets measure your sleeve lengths?

It's listed on the website that you should measure from your shoulder tip to your FIRST thumb knuckle.
This may be a personal prefernce, but I measure mine to the SECOND thumb knuclke.
Just keep in mind that the jacket will shorten a bit over time as you wrinkle it out. Also when you level your arms(ie. driving) the sleeve will shorten quite a bit and might look a bit weird.

It's adviseable to add 1 cm to the measurement (if you're measuring to the first knuckle) since the sleeves will wrinkle over time and ride up some. This is personal preference, but I highly recommend it.

Yes, but where they ride up from the first knuckle, then leaves them the 'correct' length. If they ride up, and are still at that knuckle area, the sleeves look overly long, IMHO.

Get 'em tapered and you won't have to deal with overly long sleeves.

You mean because even if they are overlong they will catch on the thumb?
